Case Study: Grappa Restaurant

The challenge

Due to a kitchen exhaust ductwork fire, an alternative solution approach was essential. A fire occurred due to solid fuel cooking not treated or not exhausted separately.

The solution

Appeared to be building constraints there was only one kitchen ventilation mechanical riser in the building for the exhaust system. The alternative solution offered was an AOS wet scrubber which was retrofitted into the existing commercial ventilation system and the advantages of the wet scrubber it operates with a high-pressure cold-water spray and mist to eliminate spark, soot, and embers and acts as a spark arrestor.

The outcome

The AOS wet scrubber and the alternative solution was certified by an independent mechanical engineer and the landlord of the building along with the insurance company was convinced with the final conclusion of the project. Maintenance Log is accessible on – site and AOS technicians provide regular maintenance and support.
